Texas Two-Step Cole Slaw

Texas Two-Step Cole SlawSALAD
4 cups shredded cabbage 
1 cup shredded red cabbage (or simply use extra green cabbage)
1/4 cup chopped red onion 
2 jalapeño chilis, seeded, finely chopped OR canned mild green peppers
2 T chopped fresh cilantro, if desired
1 (11-oz.) can Green Giant® Mexicorn® Whole Kernel Corn, drained 
1 cup shredded Cheddar cheese 
Fresh cilantro sprigs, as desired
DRESSING
3/4 cup ranch salad dressing 
1 T lime juice
1 tsp cumin 
In large bowl, combine all salad ingredients except cilantro sprigs; mix well. 
In small bowl, combine all dressing ingredients; blend well. Pour over salad; toss to coat. Serve immediately or refrigerate until serving time. Garnish with cilantro, if desired.
